the earl’s challenge: #67 — cemita al pastor [at “Tulcingo Del Valle Restaurante”]

Tulcingo Del Valle Restaurante

this cemita–a type of latin-american ‘wich–features pork, chipotles, avocado, stringy oaxaca cheese, and refried beans. it also contains pineapple slices–mahalo!–and a sauce that imparts an insane level of spiciness. it’s a testament to the craftmanship involved in making the cemita that the various flavors shine through the heat, especially the pineapple and the pork. my digestive system–and my roommate–“paid” later for my indulgence, but it was worth it.
