the common refrain about mushrooms is that they are the best meat alternatives if treated properly. as an avowed meat-lover, i would say “phooey” and continue munching through my medium-rare stash of meaty parts. this ‘shroom ‘wich, though, made me reconsider my meatless prejudices. the ‘wich heaps so many oil-coated ‘shrooms in between the bread that they taste like thin slices of marinated beef. the cheese and potato add a crumbly, silky texture that gives the ‘shrooms further body. if i close my eyes, i can maybe–MAYBE–taste sirloin rather than chanterelles. maybe.
