this cambodian take on a vietnamese banh mi uses a butter-toasted parisi bun, chili mayo, soft leeks, and a seriously sinful fillet of mackerel. i miss mackerel–not the canned variety, but the sort that my family and i used to catch on moonlit nights in yap. this ‘wich brings back many, many fond memories . . .
